Coconut chutney (with roasted coconut and fried onions)

Coconut chutney with a twist! And totally yum and lip smacking!!

This recipe calls for regular ingredients of coconut chutney but roasted coconut and little tamarind paste added to it gives it an amazingly different taste. Also the fried onions added at the end gives a good crunch and extra taste to this chutney!

Ingredients
1/2 cup grated coconut
1/4 cup roasted gram
4 red chillies
1/4 ts hing
1/4 ts tamarind paste (adjust according to need)

To temper
1/2 ts mustard seed
1/2 ts urad dal
5 shallots
Few curry leaves

Preparation

Dry roast the grated coconut on a medium flame until it gives a good aroma. Take them out in a plate and allow it to cool.

In a blender add the roasted gram, red chillies, hing and needed salt. Grind it to a fine powder. Next add the roasted coconut and grind everything together. Now add the tamarind paste and needed water and blend. This chutney is had in a semi - thick consistency.

Take out the chutney in a serving bowl.

Heat oil. Once hot temper it with mustard seed, urad dal and curry leaves. Add the chopped shallots and fry them until it turns golden brown. After its cooled, add them to the chutney and give a good mix.

Enjoy it with hot steaming idli or dosa!
