Carrot and beans poriyal

This dish is a nice variation to the simple carrot poriyal we make at home by stir frying them and adding the grated coconut at the top.

Ingredients
2 cups of chopped carrot and beans
2 ts oil
1/2 ts mustard

To grind
1 medium sized onion chopped
1/4 cup grated coconut
2 red chilli
1 ts cumin seed
1/4 ts turmeric

Preparation
  1. Pressure cook the vegetables with salt and enough water. Drain and keep aside
  2. Make a grounded paste of onion, coconut, red chilli, cumin and turmeric in a blender.
  3. Heat oil in kadai. Add mustard seeds. Add the ground paste and fry for 2-3 minutes until the raw smell of onion goes out. Add salt
  4. Add the vegetables and combine them well with the mix
Simple, fast and delicious poriyal is ready. The masala paste used above is very versatile. Cabbage and egg poriyal can be done using the same method and they truly taste delicious. Simply mouth-watering.
